A good slaw is a god send. It really is a great side with pretty much anything – avoid contaminating it with mayo and its suits all diets and is a great way to enjoy raw food without freaking out picky eater.
The best bit about it is how easy it is to make and how well it keeps.
Raw Slaw Recipe
- 3 courgettes
- 1 small red cabbage
- 3 peeled carrots
- 1 White onion
- If you have a spiraliser use it on the courgette and the carrot – it makes gorgeous ribbons which help bind everything together. If not just grate them.
- Next gate the red cabbage and white – on the mandolin slice on he narrow side of the cheese grater.
- Place all the ingredients in a bowl and combine until well mixed
- Store in a large killer jar in the fridge, it can be dressed with mayo or salad dressing when needed.
